Crockpot Tater Tot Casserole is easy to make in the slow cooker and full of comfort food flavors the whole family will love. Everyone won't be able to get enough of the creamy beef sauce and fun potato topping!

In a wide pan over medium heat, brown the ground beef. Drain any excess grease.
Add the ground beef to the bottom of the slow cooker.
Add the diced onion, green chilies, mushroom soup, sour cream, milk, garlic powder, salt, and pepper. Mix until well combined.
Layer cheddar cheese on top of the meat mixture.
Add a layer of tater tots.
Cover with the lid and cook on HIGH for 2 hours or LOW for 3 to 4 hours.
Garnish with chopped chives and serve with an extra dollop of sour cream or hot sauce.
Notes
If the chilis are too spicy for your family, you can always leave them out and add half a cup of the milder roasted pimientos in its place.
To bump up the color, texture, and nutrition, add some extra veggies into this recipe. Frozen veggies like corn or green beans work best. Just layer them on top of the beef with the diced onion!
You can swap out the tater tots for frozen country-style or shredded hash browns if you prefer.
