Equipment

  • 6-qt Instant Pot

Ingredients

  • 1/2 pound thick-cut bacon, , chopped
  • 1 tablespoon butter
  • 1 onion, peeled and chopped
  • 2 cloves garlic, peeled and minced
  • 1/2 cup chicken broth
  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 pounds green beans, ends trimmed

Instructions

  • Press the SAUTE mode to turn on and add the bacon. Cook until it crisps up and renders fat. With a slotted spoon, remove from pot and set aside.
  • Add butter as needed to make about 2 tablespoons fat.
  • Add the onions and garlic and cook for about 1 minute or until softened.
  • Add the chicken broth and scrape the bottom and sides with a wooden spoon to deglaze the pot.
  • Add the honey, balsamic vinegar, salt, and black pepper. Stir until combined.
  • Add in the green beans and mix well.
  • Close and lock the lid and set the valve on the SEALING position. Pressure cook on HIGH for 1 minute for crispier green beans or for 2 minutes for a softer texture.
  • When finished, quickly release pressure.
  • Open the instant pot and add the bacon. Serve hot.
