Ingredients
2tablespoonsbutter
1onion, peeled and chopped
1/2green bell pepper, seeded, cored, and chopped
1/2red bell pepper, seeded, cored, and chopped
1package(12 ounces) kielbasa sausage
2headscauliflower, riced
1teaspoonsmoked paprika
1teaspoononion powder
1teaspoongarlic powder
1teaspoonsalt
1teaspoonground black pepper
1/2teaspooncayenne pepper
1/2teaspoonthyme
1/2cupchicken broth
Instructions
Without the lid on, PRESS the SAUTE mode button on the Instant Pot. When HOT appears on the display, add butter.
Add bell peppers and onions and cook until softened. serve.
Add sliced kielbasa and cook until lightly browned.
Turn off the SAUTE setting and add the cauliflower rice to the pot and stir until ingredients are combined.
Add paprika, onion powder, garlic powder, salt, black pepper, cayenne pepper, and thyme.
Add broth and stir again to evenly distribute seasonings.
Close and lock the lid, and set the floating valve on the SEALING. Cook on MANUAL for 1 minutes.
When finished, do a QUICK RELEASE. Carefully open the lid.
Fluff the cauliflower rice with a fork and serve hot.
